I love living in Spain. I’ve lived in Girona, about an hour from Barcelona, since 2010. I love the laid back lifestyle, the training, the weather, my tiny one bedroom apartment that looks out over the medieval city and the Pyrenees, and the people.
One thing I don’t love is that Spanish people don’t do breakfast. People have tried to tell me this isn’t true. But they’re wrong. A croissant and an excessively milky coffee does not equal breakfast.
When I talk breakfast, I’m talking toasted muesli with yoghurt and fresh fruit. I’m talking poached eggs on rustic sourdough bread with mashed avocado. I’m talking a breakfast burrito stuffed with scrambled eggs, bacon, salsa and beans.
You know - the sort of breakfast where you don’t have to eat again until 5pm.
So I make my own, inspired by the coffee shops of Australia.
One of my favourite breakfast recipes is protein pancakes and not only because by putting the word ‘protein’ in front of ‘pancake’ makes something that is traditionally an indulgence seem not as bad for you. In reality, these are actually great for you and will keep you fueled well into the day.
Ingredients
Servings for one Chloe or two normal people
- 1 medium sized banana
- 1 tablespoon of almond milk (cow’s milk is ok)
- 3 tablespoons of protein powder
- 3 egg whites
- 1 teaspoon of cinnamon
- butter or coconut oil
- seasonal fruit
- honey
Preparation
- Mash banana in mixing bowl and combine with milk.
- Combine powder, eggs whites and cinnamon with banana mash and mix free of lumps.
- Heat fry pan to medium heat and grease with coconut oil or butter.
- Make your amazing pancakes!
- You should get three medium sized pancakes.
